Pickles
Why This Recipe:
How about making pickles for a summer treat? this recipe requires some patience, but is worth the wait. The children will enjoy watching the cucumbers turn into pickles.
Ingredients:
- 1 quart-sized jar
- 10 very small pickling cucumbers
- cloves of garlic
- sprigs of dill
- 1 1/2 cups water
- 1/4 cup vinegar
- 2 Tablespoons salt
Directions:
- Place the cucumbers, garlic and sprigs into the jar (placing a few cucumbers and then some garlic and dill in the jar. Add more cucumbers, followed by more garlic and dill, until all of the cucumbers have been added)
- Combine the water, vinegar and salt and then pour the mixture into the jar, over the cucumbers.
- Cover the jar tightly and drape a dry towel (dishtowel, etc.) over the jar to keep out light.
- Let the jar stand in a cool place for two weeks (for example, on a countertop away from direct sunlight or on a shelf in a closet).
- Refrigerate before eating.
