Lentil Stew
Why This Recipe:
Jacob is cooking lentil stew when his brother Esau returns home from a day
in the fields. Esau is hungry and tired, and the smell of the delicious
stew overwhelms him. He asks Jacob to pour the stew right down his
throat, and Jacob agrees to serve his brother some stew on the condition
that Esau sell him his birthright as payment.
What would you trade for a bowl of this appetizing soup?
Ingredients:
These are approximate measurements - feel free to use your own feelings when you cook and to vary the quantities of the ingredients as you wish.
- 1 large soup pot
- 1 large, sweet onion, chopped
- 2-3 celery ribs, sliced
- 1 T vegetable or olive oil
- Approx. 10 cups water,
- 2-3 carrots, sliced or shredded
- 1 large potato, cubed 1 medium sweet potato, cubed
- 1 medium yam, cubed
- 1 package of red lentils, cleaned and rinsed
- 1-2 handfuls chopped fresh parsley
- 1 handful chopped fresh dill
- salt to taste
Directions:
- Preheat your soup pot, then add oil. (Always heat your pot before adding oil.)
- Heat oil, then add onions and sauté until soft.
- Add celery and sauté with onions until they begin to caramelize.
- Add carrots, potatoes, and lentils and enough water to adequately cover everything in the pot. (Approx. 10 cups.).
- Bring to a boil, then turn down to a light simmer.
- Add dill and one handful of parsley and some salt.
- Simmer for at least 2-3 hours, stirring occasionally.
- Add water if it’s too thick. Add salt to taste.
- Add the second handful of parsley shortly before serving.
- Eat and enjoy!
