Pickles


Why This Recipe:

How about making pickles for a summer treat? this recipe requires some patience, but is worth the wait. The children will enjoy watching the cucumbers turn into pickles.

Ingredients:
  • 1 quart-sized jar
  • 10 very small pickling cucumbers
  • cloves of garlic
  • sprigs of dill
  • 1 1/2 cups water
  • 1/4 cup vinegar
  • 2 Tablespoons salt

Directions:
  1. Place the cucumbers, garlic and sprigs into the jar (placing a few cucumbers and then some garlic and dill in the jar. Add more cucumbers, followed by more garlic and dill, until all of the cucumbers have been added)
     
  2. Combine the water, vinegar and salt and then pour the mixture into the jar, over the cucumbers.
     
  3. Cover the jar tightly and drape a dry towel (dishtowel, etc.) over the jar to keep out light.
     
  4. Let the jar stand in a cool place for two weeks (for example, on a countertop away from direct sunlight or on a shelf in a closet).
     
  5. Refrigerate before eating.
